Coconut Mojito - Sunlee cooking recipe

Ingredients

  • 8 leaves fresh mint
  • 1 wheel lemon cut in half
  • 2 teaspoons lemon simple syrup or plain
  • 3 oz coconut rum or regular white rum
  • 1 oz cream of coconut
  • 1/4 can of Sunlee coconut juice with pulp
  • Extra lime juice to taste

  • In a highball glass, muddle together mint leaves, juice from 1/4 lime and cream of coconut.
  • Fill glass with ice and add both types of rum
  • Top with a splash of soda water and stir with a cocktail spoon
  • Garnish with lime and mint.
